hi everyone! i just got back from a walk with the kids and it was FREEZING outside! i am thankful that i had them in sweats and long sleeve shirts, but mercy! i can not believe that it is officially fall. this year has flew by! it has been a while since i have published a $30 for 5 meals, so this edition may be more of a mix of recipes. next edition, we will stick with the fall recipes to match the cooler weather.

sweet corn and bacon salad– i have to say, this recipe is quite ridiculous. lol. it is nothing like sweet, crunchy corn and smoky bacon. it is the perfect marriage. i usually make a huge batch and we eat ours with crescent rolls or crunchy bread. it also works great as a side.
salmon burgers with lemon cilantro mayo – i grew up with salmon croquettes as a child. my mom made them every week and they were really good. so i used my mom’s method of making croquettes and changed up a few ingredients. these burgers are delicious by themselves. but if you dare to top them with my lemon cilantro mayo, you will love it!
easy spaghetti meat sauce – spaghetti is a regular in our house. usually, my level of laziness decides whether i make meatballs or meatsauce. this recipe is packed with flavor to the degree that my kids don’t really mind when i make it instead of meatballs! very simple but delicious.
creamy chicken and potatoes (slow cooker) – this is a true comfort dish. chicken and potatoes cook low and slow with fresh onions, garlic and a creamy sauce. the result is not only delicious with melt in your mouth chicken, but it cooks all by itself.
cheesy zucchini and potato cakes with fresh tomato sauce – this recipe is incredible and can be transformed in so many ways. zucchini and potato cakes lightly sauteed and layered with a fresh tomato sauce and creamy mozzarella. this dish can be doubled and turned into a delicious lasagna.
