hey ya’ll! okay, okay. once again, i have been slacking when it comes to $30 for 5 meals! sometimes, i get rolling in the stride with recipe ideas that keep popping into my mind and $30 for 5 meals gets neglected. but thanks for all of the reminders and support ya’ll. since it is just me, i can easily get side tracked. this is my favorite time of the season. it is perfectly warm, and time for fresh spring meals. let’s see what i can come up with in this edition!

slow cooked chicken stuffed pasta with roasted garlic cream sauce – this dish is absolutely delicious. i cooked the chicken in a slow cooker until it was melt in your mouth tender. then i combined the chicken with tomatoes, sour cream and cilantro. i filled some pasta shells with the yummy chicken mixture and poured roasted garlic cream sauce all over the top. your family will love this recipe.
creamy mushroom, chicken and rice soup – this hearty soup comes together in minutes for an easy dinner. perfect with some crusty bread.
blackened chicken sandwiches with avocado cream sauce – i am still thanking my hubby for coming up with the idea for these sandwiches! i blackened the chicken with some various spices, placed it on a bed of lettuce and tomato. then i smothered it with a creamy avocado sauce. this sandwich is a must try.
sausage and veggie couscous – now before you quickly skip over this recipe, i feel you on couscous. but i found that all couscous needs is a tremendous amount of flavor and a little bit of love. lol. i added tons of aromatics, sausage and chicken broth to make this dish very tasty. the added bonus? it is on the table in less than thirty minutes.
lemon basil pasta with chicken – not a huge fan of lemon flavored anything. but creating this recipe has changed my mind! the sauce is very bright from the lemon and velvety from the sour cream. the hubby drank some of the sauce with a spoon. yeah. it’s that good. 🙂
