summer is finally here full swing. tomorrow, my kids have a half of day at school and will be out for the summer! usually, my summer meals are quick and easy. with all 4 kids in extra curricular activities and home ALL DAY, it is utter chaos. to fight the urge of eating out and picking up a quick meal while we are out and about, i try to make my meals convenient. this edition’s recipes are exactly that. meals that you can make in a flash that fit into our busy lives.
ground beef and enchilada skillet – raise your hand if you LOVE enchiladas! i absolutely love them. but i have to admit, i only make them on day’s when i have high energy… which means they are hardly ever made. in my opinion, they are time consuming to make! i had to find a way to simplify making one of my favorite dishes. with this recipe, you will have a delicious enchilada dinner on the table in no time.
crispy lemon chicken – i am a sucker for delicious chinese food. there is ONE good restaurant in our area that serves the best chinese food. the rest? not so much. but with the delicious food comes the price. for one order of crispy chicken in our area, it is $15.95! my recipe? $6.39. not only is it cheaper and a flash to get on the table, it is delicious, too.
open faced chicken and grilled corn quesadillas – with summer comes sweet fresh corn. i can not get enough of it! it seems to make its way into many of my dishes and this is one of them. these quesadillas have crunchy tortillas, sweet corn, tender poached chicken and a tangy cilantro lime sour cream. gotta try this one!
cheesy chicken, rice and peppers skillet – this skillet is another quick and easy meal that hits the table in no time. i browned the chicken with some garlic, onions and peppers. i stirred in some sour cream and broth, then added some uncooked rice to soak up all the goodness. our family loved this dish!
creamy sausage and potato skillet – my last meal that is quick and easy, is this creamy potato skillet. this recipe is loaded with flavor by browning some turkey sausage with fresh garlic, onion and potatoes. then, i stirred in a creamy cheddar cheese sauce and baked it until the potatoes were tender and browned nicely. another family favorite.
the GRAND total? $29.47! awesome. so happy we hit the mark. here is our receipt, by the way…
