heellloo there! i apologize for missing last month’s $30 for 5 meals. as many of you know, i had surgery. since my recovery time will be 6 – 8 weeks, i’m not sure when i will be able to get in the kitchen and create some recipes. then, i had another unexpected hiccup, which was a post surgery infection. i am still hopeful that my recovery period will not be as long as projected. i did, however, cook ahead and store a few recipes that i will be sharing during my recovery. anyway, i hope you enjoy the recipes in this month’s edition.
slow cooker italian sausage, peppers and onions – this is the kind of recipe we need. a slow cooker recipe smack dab in the middle of the summer. every-time i cut on my stove, we instantly start sweating. lol. okay, maybe not that severe, but we feel it. this recipe is a sure way to stay cool and have a tasty meal on the table in no time.
pizza spaghetti bake – this pizza spaghetti bake is amazing. i wanted to make a baked spaghetti recipe and thought i would throw in my favorite pizza components. i’m so glad i did. this recipe is very versatile. you can add mushrooms, sausage, banana peppers, whatever floats your boat! also a great recipe to double up on and freeze!
chicken lo mein – ah, lo mein. hands down one of my favorite ever meals. not only is it a great way to use up veggies in your fridge, but it cuts the cost in half making it yourself. this recipe was created with ingredients i had on hand, but feel free to fancy it up with whatever you like. versatility is this recipe’s middle name. 🙂
beef fajita pasta- this skillet is another quick and easy meal that hits the table in no time. our family loves fajitas and orders them a lot when we eat out. i found a way to stretch the cost of the beef by adding pasta. full of flavor, i know your family will enjoy it!
slow cooker ranch cream cheese chicken – as you can see, slow cooker meals are my bff. i love letting my bff do all of the cooking for me while i am busy running my errands. well, it was nice to come back to this meal. the chicken is seasoned with my own ranch dry rub and then slow cooked. i then melted down a block of cream cheese and poured it into the the chicken juices created by the chicken. one of my best recipes ever.
the GRAND total? $30.55! awesome. so happy we hit the mark. here is our receipt, by the way…
