crockpot minestrone soup – crockpot meals… my bestfriend. with 4 kids, crockpot meals make my life so much easier. with this soup, i threw together some veggies, chicken broth, tomatoes and aromatics, and let them perfume my home all day long in the slow cooker. at the end, i added some pasta and topped it with some parmesan cheese. simple, yet so good.
*shared recipe – quick and easy lasagna – this recipe submitted by maggie is amazing. she found a way to not only cut the acidity of the traditional lasagna by adding sour cream to the sauce, but simplified the layering process as well! a must try.
baked asian cod in pouch – another easy meal to make. place a delicate cod fillet on a bed of spinach with soy sauce, sesame oil, garlic and a few other ingredients. place it in a aluminum foil pouch and bake. dinner is on the table in minutes with easy clean up. serve with fresh veggies or rice.
gemelli pasta with pesto cream – sometimes it is hard to believe that meals with very few ingredients can be good. this meal will make you a believer. heavy cream, pesto, butter and parmesan cheese make an incredibly flavorful sauce that takes minutes to put together. perfect for a no meat night…you will not miss it.
chicken fajita french bread pizza – who does not love fajitas! you have to try this pizza! chicken simmered in tomato sauce and other spices, with fresh garlic, slightly crunchy onions and bell peppers. piled on top of french bread (enough said) and smothered in cheese. should i say more?
how did we do! the receipt says it all!
okay, let me know how you liked these meals along with your own unique touches. and don’t forget to send in your great tasting meals! see you next month!
