hello all! i am so excited about getting back in the rhythm with $30 for 5 meals. this is such an exciting time. with it getting colder outside and the holidays approaching, i can’t help being happy in the kitchen. this month’s edition worked out great. we were so far under budget, i threw in a dessert! a whole doggone cake! okay, okay…lets get started.

spiced veggie soup – this soup is the easiest soup to make and i always have a batch in my fridge! just toss everything in one pot and let it work its magic. this is a great way to clean out the fridge and use the veggies before they go bad. the spice from the jalapeno gets cooled down by the dollop of sour cream on top. be sure to make extra and freeze.
avocado and bacon stuffed chicken – this chicken makes me dance! i love anything avocado. tossing in some bacon, sour cream, garlic and cilantro never hurt nobody! i stuffed it in some chicken, topped it with crunchy panko, and baked it until golden. it was amazing. if you’re tired of boring chicken dishes, try this one!
cajun chicken, sausage and rice – this dish can not be simpler. this rice gets a makeover by adding cajun seasoning, chicken and other aromatics. it is simple, yet bold and tasty.
baked hawaiian chicken skillet – this dish tastes better than it looks. is that possible? 🙂 the sweet and savory elements makes your mouth go crazy. the chicken marinates in soy sauce, brown sugar, pineapple juice, lemon juice, garlic and ginger. then it is baked in this rich sauce leaving it extremely tender. you MUST try this one.
angel hair pasta with tomatoes and parmesan – the. simplest. recipe. ever! the amount of time it takes for the pasta to cook is the amount of time it takes to make this recipe. it is quick, delicious and perfect for any weeknight meal.
our total? $25.21!! wow! almost $5 under this month! we have money left. hhmm…let’s throw in dessert, shall we?
vanilla yogurt cake– this cake is light, moist, and extremely versatile. instead of vanilla extract, add in lemon extract or even almond extract and garnish with toasted almonds! the options are unlimited on this yummy cake. this whole cake cost $4.19 to make. WAY more than 4 servings. we did great this month ya’ll! here is our receipt, by the way…
