blackened chicken sandwiches with avocado cream sauce

one afternoon, i was in the mood for avocado and was brainstorming with the hubby on how i was gonna make it. i was kind of all over the place. i initially started talking about avocado dressing on a salad but with the hubby in the convo, it quickly went to burgers. but what kind of burgers? we talked about hamburger meat burgers, to tuna patties and then the hubby said, chicken! i said, chicken? oohh! blackened chicken! we tested the recipe and oh my goodness. some good stuff.
ingredients:
- 2 tablespoons canola oil -
- - for the spice rub
- 2 teaspoons garlic powder -
- 2 teaspoons onion powder -
- 2 1/2 teaspoons paprika -
- 1 teaspoon cayenne -
- 1/2 teaspoon dried thyme -
- salt/pepper - to taste
- 2 chicken breasts - sliced in half horizontally
- - avocado cream sauce
- 1 ripe avocado - pitted
- 1 lime - juiced
- 2 tablespoons sour cream -
- 1 clove garlic - grated fine
- 1/4 teaspoon worchestershire sauce -
- salt/pepper - to taste
- - toppings
- 1 tomato - sliced
- 1/2 onion - sliced
- 4 hamburger buns -
instructions:
- preheat the indoor/outdoor grill to medium high heat. lightly oil the grate.
- in a small mixing bowl, combine the spices with salt/pepper to taste. sprinkle generously over the chicken breasts. place the seasoned chicken on the grill and cook about 5 - 7 minutes on each side, or until juices run clear.
- for the avocado cream sauce - combine the ingredients in a ziploc bag. mash the ingredients together through the bag until combined. squeeze out into a serving bowl.
- to assemble: add some tomato, onion and blackened chicken breast to the bun. dollop a generous amount of the avocado cream sauce on the top bun and place on top.
