buttermilk pound cake with orange glaze

i have to say, i receive a decent amount of emails from readers, asking if i have any pound cake recipes, and it makes plenty of sense. how can i have a 'po' man meals' website, with comfort food and not have ONE pound cake recipe on it? i guess i'm slippin'. so... now is the time to change that. i was trying to decide what kind of pound cake to make. i wanted it to be different (like usual), but not too out of the ordinary that no one would like it. i already have a peach streusel cake, chocolate chip icebox cake, blueberry cake, a yogurt cake, a chocolate chip cake.... so what now? for some reason i kept thinking about buttermilk. i decided to keep the recipe simple and classic by making a buttermilk pound cake with a nice glaze. i quickly thought about lemon, but switched it up a bit with orange. if you prefer lemon, absolutely grab a lemon instead of an orange. but the secret about this cake is the orange syrup, that the cake sops up before getting glazed. this cake is already moist and the syrup adds so much more moisture. i tell ya, this cake is the doggone bomb and the orange did the trick! now i have a pound cake recipe. yay! 🙂
ingredients:
- 2 sticks (1 cup) of butter - room temperature
- 2 cups sugar -
- 3 eggs -
- 3 cups flour -
- 1/2 teaspoon baking soda -
- 1/2 teaspoon salt -
- 1 cup buttermilk -
- orange syrup
- 1/4 cup water -
- 1/4 cup sugar -
- 2 tablespoons orange juice -
- orange glaze
- 1 cup powdered sugar -
- 2 tablespoons orange juice -
- 1 tablespoon orange zest -
- 1 tablespoon butter - softened
instructions:
- preheat the oven to 325 degrees.
- butter and flour a 10' bundt pan. set aside.
- in a large bowl, cream the butter until light and fluffy.
- add in the sugar and blend until incorporated.
- add the eggs, blending in one at a time.
- mix the flour, baking soda and salt together in a small bowl.
- pour some of the mixture into the cake mixture, blending.
- mix in some of the buttermilk.
- alternate mixing in the dry ingredients and buttermilk until gone, ending with the dry ingredients. blend until just mixed, not over mixing.
- finish folding with a spoon.
- spoon the cake batter into prepared bundt pan.
- bake in the preheated oven for an hour or until a toothpick inserted comes out clean.
- allow to sit for a few minutes before turning out onto a plate.
- place the water and sugar in a small pan over medium heat until the sugar dissolves. turn off the heat and add the orange juice. brush the syrup over the hot cake.
- in a small bowl, mix the powdered sugar, orange juice, orange zest and butter together until smooth.
- pour over the cooled cake.
- try not to eat the whole cake...
