chicken and orzo soup

i love any type of soup, especially in the winter time. feel free to toss in any leftover veggies from the refrigerator or even beans.
ingredients:
- 1 cup orzo -
- 2 tablespoons canola oil -
- 3 boneless skinless chicken breasts - chopped
- 4 cloves garlic - minced
- 1 onion - chopped
- 1 carrot - chopped
- 4 celery stalks - chopped
- 1 teaspoon dried basil -
- 8 cups water -
- 6 chicken bouillon cubes -
- 1 cup spinach -
instructions:
- bring a large pot of water to a boil. salt the water and add the orzo. cook for 7 minutes, drain and reserve.
- heat a large skillet over medium high heat and add the oil. once hot, add the chopped chicken breasts and let sear for about 3-4 minutes. season with salt/pepper to taste. toss the chicken and add the garlic, onions, carrots and dried basil. season with salt/pepper (if needed). saute for about 3-4 minutes until tender. pour in the stock, scraping the bits from the bottom of the pot. stir in the reserved orzo and spinach; let simmer for about 20 - 30 minutes until flavors blend.
