chicken apple sausage

this sausage is ridiculously good. the sweet, savory and hint of spicy makes your mouth go bananas. making your own sausage makes a huge difference! you can customize it to whatever you like to eat and you are adding ingredients you can spell.
this recipe makes A LOT of sausage patties. feel free to double the recipe and freeze, so they are ready whenever you need them.
ingredients:
- 1/2 onion - grated
- 3 cloves garlic - grated
- 1 tablespoon brown sugar -
- 1 teaspoon paprika -
- 1/2 teaspoon thyme leaves -
- 1 teaspoon rubbed sage -
- 1 teaspoon salt -
- 1/4 teaspoon cayenne -
- pepper to taste -
- 1 gala apple - chopped
- 1 pound ground chicken -
- 6 tablespoons canola oil -
instructions:
- combine the onion, garlic, brown sugar, paprika, thyme leaves, sage, salt, cayenne and pepper well. stir in the chopped apples. lightly break up the ground chicken over the mixture. lightly toss all the ingredients until combined. refrigerate for about 30 minutes to overnight. shape into medium sized patties (example in pic above).
- if you like, test the sausage first. take a small amount of the mixture and add it to a lightly oiled preheated pan. cook it through and taste. if it is to your liking, follow below. if not, add more salt, cayenne or other seasoning you may enjoy.
- preheat a skillet over medium high heat. add about 2 tablespoons of the olive oil to the pan. once hot, add the patties to the pan. cook about 4-5 minutes on each size or until browned and cooked through. repeat with remaining sausage patties.
