crispy chicken sandwiches with garlic mayo

these crispy chicken sandwiches are my son's favorite! sometimes i fry the chicken when i am low on time or don't mind the extra calories. 🙂 either way, you will enjoy this recipe!
ingredients:
- - for crispy chicken
- 2 chicken breasts - sliced in half horizontally (totaling 4 pieces)
- salt / pepper -
- 2 cups panko breadcrumbs -
- 2 teaspoons garlic powder -
- 2 teaspoons onion powder -
- 2 teaspoons dried parsley -
- 2 eggs - beaten
- 1/4 cup water -
- 1 cup flour -
- - for garlic mayo
- 1/3 cup mayo -
- 1/2 teaspoon white vinegar -
- 2 garlic cloves - grated
- 1/2 teaspoon dijon mustard -
- salt/pepper -
- - chicken accesories
- 4 buns -
- 1 tomato - sliced
- 4 lettuce leaves -
- cooking spray -
instructions:
- create your breading station with 3 shallow bowls. in one bowl, combine panko bread crumbs, garlic powder, onion powder, and parsley. in another bowl, mix the eggs and water. and in the last bowl, add the flour. salt/pepper the chicken breasts on both sides. dip the seasoned chicken in the flour, then into the egg wash mixture and then lay into the breadcrumb mixture. press into the crumbs, coating the chicken well on both sides. place onto an aluminum foiled lined baking sheet that has been sprayed well with some cooking spray. spray the top of the coated chicken with the cooking spray as well. put into a 375 degree oven for 45 minutes, or until chicken is brown, crunchy and cooked through. be sure to flip halfway through the cooking process. another cooking alternative is to place a cooling rack in a baking sheet and place chicken breasts on top of the cooling rack. with this method you do not have to flip the chicken halfway through since the cooling rack provides ventilation around the whole breast.
- for the mayo - combine all the ingredients in a bowl.
- to assemble - smear a generous amount of the garlic mayo on both sides of the bun. place a breaded chicken breast, slice of tomato and lettuce leaf on the bun bottom and top with the top bun.
