crunchy zucchini sticks

zucchini is hands-down one of my favorite veggies. i love them in gratins, soups or just sauteed with some butter, salt and pepper. the sad thing is my family...not so much. i mean, my girls will eat just about anything i cook. my sons will look at it sideways. but these zucchini sticks are a different story. whether i fry them or bake them, they crowd around me taking turns taking bites! these sticks are delicious and very simple. they pair well with my homemade buttermilk ranch dressing recipe.
ingredients:
- 2 zucchini - cut into half and then into matchsticks
- 1 cup flour -
- 1 egg -
- 1 cup panko crumbs -
- 1 cup vegetable oil -
instructions:
- create a breading station for your fried zucchini. in one bowl, add the flour. in another bowl, add the egg and in the last bowl add the panko breadcrumbs. place a few of the zucchini sticks in the flour, turning on all sides to get well coated. then place the zucchini into the egg mixture, turning to coat and then into the panko. place the breaded zucchini onto a baking sheet and repeat until all of the zucchini sticks are coated. allow them to air dry for about 10 minutes, so the breading will adhere to the sticks.
- heat the oil over high heat. once hot, carefully add in the sticks, about 4 at a time. be careful not to overcrowd your pan. fry the zucchini, constantly turning the sticks until browned on all sides. salt/pepper to taste well, immediately after they come out of the hot oil. makes about 24 sticks. serve with my homemade buttermilk ranch dressing recipe, if desired.
i love the taste of the zucchini without any additional spices. feel free to add some spices of your choice to the flour. for a little twist, add some parmesan cheese to your panko mixture. bake them instead for a healthier version.
