easy beef and broccoli

beef and broccoli is one of my favorite meals to order from our local chinese restaurant. the tender beef, crunchy broccoli and dark rich sauce is sooo good. but good things sometimes come with a price tag! and spending almost $10 for them to cook my dinner sometimes makes me a tad bit disturbed. so one day, i came up with my own recipe. i've tweaked it a few times and got it to where i love it! sometimes i use this recipe with chicken. either way, you gotta put down the menu and make this one!
ingredients:
- beef marinade
- 1.5 pounds thin sliced stir-fry beef -
- 1 tablespoon soy sauce -
- 1 tablespoon rice vinegar -
- 1/4 teaspoon sesame oil -
- other ingredients
- 1 and 1/2 tablespoon vegetable oil -
- 3 cloves garlic - minced
- 1 teaspoon ginger - minced
- 1 onion - sliced
- 1 bag frozen broccoli -
- sauce
- 2 cups beef stock - *bouillon based
- 1 tablespoon soy sauce -
- 2 tablespoons cornstarch -
instructions:
- combine the beef marinade ingredients in a bowl or storage bag.
- add the beef. allow to marinade for at least 30 minutes to overnight.
- preheat a large skillet or wok over high heat. add one tablespoon of the oil. once hot, remove the beef from the marinade, shaking off the excess. add to the hot pan and allow to sear by not moving for a couple minutes.
- cook in batches if your pan or wok is not bug enough for the meat to be in a single layer. toss the meat until desired doneness and remove from the pan to a plate.
- allow the pan to get hot again. add the remaining oil to the pan or wok and carefully add in the garlic, ginger and onion slices.
- toss for a few seconds, being careful not to burn them. add in the broccoli. toss around in the garlic and ginger for a couple minutes.
- (if using fresh broccoli, cut into segments, add to a large pot of salted boiling water for a couple minutes and immediately add to a large boil of ice water until cool. drain well and add to the garlic mixture.)
- mix together the ingredients for the sauce. and pour into the broccoli mixture.
- bring to a boil, to allow the sauce to fully thicken. reduce to a simmer.
- add the beef back in and toss.
- serve hot over rice or noodles.
