i love pesto. it is one of the most flavorful sauces you can make! i usually like to use cilantro as the herb in my pesto, since it is my favorite herb. but adding cream and some butter never hurt anyone, right? 🙂 this creamy pesto goodness is awesome over pasta. few ingredients, huge flavor. great with shrimp or any other protein as well.
- 1 lb gemelli pasta -
- 3/4 cup heavy cream -
- 2 tablespoons butter -
- 1/3 cup parmesan cheese -
- 1/4 cup prepared pesto paste -
- bring a large pot of water to a boil. once the water is boiling, salt the water and add the pasta. cook according to package instructions. drain and set aside.
- in a medium sauce pan, add the heavy cream and butter. place over low heat and let butter melt. simmer cream over low heat until reduced by a third. remove from heat and stir in the pesto and cheese. place the hot pasta in a large bowl and toss with the pesto cream sauce.
