ginger soy chicken

i happen to be a food network junkie. i can watch it all. day. long. one day, one of my favorites came on, barefoot contessa, whom i love. as soon as i saw her make it i rushed to get the ingredients. i have made this recipe for my family time and time again. it is always a huge hit, plates licked clean. make this one day. you barely have to chew this chicken it is so tender. i know marinating over night can be somewhat of a pain. but trust me it will be worth it when you taste it the next day.
ingredients:
- 3/4 cup soy sauce -
- 1/4 cup garlic - minced
- 1/4 cup fresh ginger root - peeled and grated
- 1 cup honey -
- 6 bone-in, skin-on chicken breasts -
instructions:
- cook the soy sauce, garlic, ginger and honey in a small saucepan over very low heat until combined and honey is melted. arrange the chicken in 1 layer in a shallow pan, skin side down and pour on sauce. cover with aluminum foil and marinate for at least 30 minutes, preferably overnight.
- heat oven to 350 degrees. place baking pan in oven for 25 minutes, uncover pan, turn chicken skin side up and cook for another 20 minutes or until juices run clear.
sky is the limit with this recipe. you can shave off a few dollars by using chicken thighs instead of breasts. also, boneless, skinless chicken is another option.
