ham fried rice

ham fried rice is very hard for me to find nowadays. my parents use to order it all the time when we lived in north carolina, but it is unheard of where i live now. so i came up with this recipe since i love it so much. feel free to sub in chicken, beef, shrimp or just add more veggies with no meat.
ingredients:
- 1 tablespoon canola oil -
- 1 egg - lightly beaten
- 2 tablespoons canola oil -
- 1 pound package ham - cubed
- 1 onion - chopped
- 3 cloves garlic - minced
- 1 teaspoon ginger - grated
- 6 cups cold rice -
- 1/4 cup soy sauce -
- 1 teaspoon sesame oil -
- 4 scallions - chopped
instructions:
- heat oil in a wok or large frying pan over high heat. season beaten eggs with salt/pepper to taste. when the oil is hot, add the eggs. cook, stirring constantly to prevent them from burning. saute until they are lightly scrambled and remove from pan. wipe out the pan.
- add 2 more tablespoons of oil. add the the ham and let sear for a few minutes on one side. saute and cook until lightly browned. add in onions, garlic and ginger. toss for a few minutes until fragrant and remove from pan. add the cold rice and stir fry for a few minutes with wooden spoon, breaking it apart as it cooks. stir in the soy sauce and sesame oil. saute, tossing for a few minutes longer. add the ham mixture back in, constantly tossing. remove from heat and stir in the eggs and scallions.
