jazzed up brown rice

brown rice is frowned upon by many. this version adds great flavor through the infusion of aromatics.
ingredients:
- 2 tablespoons butter -
- 1/2 onion - chopped
- 2 cloves garlic - minced
- 4 bouillon cubes - chicken or vegetable
- 1 teaspoon parsley -
- 2 cups brown rice -
- 4 3/4 cups boiling water -
- salt/pepper -
instructions:
melt butter in a medium saucepan over medium heat. add onion, garlic and saute until tender. add the brown rice, bouillon cubes and dried parsley. stir to combine, making sure the brown rice is coated with the butter. cook, stirring for about 3 minutes, toasting rice. with the spoon, break down the bouillon cubes. season with salt/pepper to taste and add the hot water. cover with a lid and cook for 45 minutes. fluff with a fork.
