moist banana nut bread

banana bread is so good. it is something my mom made often and it was always so moist. she always made it around the holidays. so whenever i make it, it always takes me back to my childhood. *tear* the fact that it is so easy to make is the added bonus with this delicious bread. this recipe gives you to large loaves. is it great to double up on and freeze. just cover with foil and put in freezer bags. i love giving these loaves as christmas gifts. also, be sure to try my banana bread french toast using this recipe.
ingredients:
- 2 1/4 cups flour -
- 1 1/4 teaspoons baking soda -
- 2 cups sugar -
- 1/2 teaspoon salt -
- 3 eggs -
- 2 teaspoons vanilla -
- 1/4 cup buttermilk -
- 3/4 cup vegetable oil -
- 1 cup pecans - chopped
- 5 over ripe bananas -
instructions:
- preheat oven to 350. grease 2 loaf pans.
- in a bowl, mash bananas well. sift flour, salt and baking soda into parchment paper. in another bowl combine oil, buttermilk, eggs, and vanilla. add sugar and mix well. gradually mix in dry ingredients until combined. please do not over mix. fold in bananas and chopped nuts. pour into greased loaf pans. bake for an hour or until toothpick is clean.
