moist cinnamon apple bars

it's thursday night, ya'll. what is thursday night? it's guys night! i have to say, having my hubby's best friends over every thursday for guys night really pushes me to come up with new and creative desserts for them to eat. i can't have them eating the same thing every thursday! so this brainstorming session was very easy. we had this HUGE bowl full of apples on the kitchen counter, that we keep in the house for our kiddos. so, i knew i wanted to make something with apples. these bars were very light, moist and FULL of apple! they were delicious warm with some apple ice-cream. mmmmm. heaven.
ingredients:
- 3 apples - skin removed, cored, chopped into squares
- 1/2 teaspoon cinnamon -
- 1/4 cup brown sugar -
- 1 and 1/4 cup flour -
- 1 teaspoon baking powder -
- 1/2 teaspoon cinnamon -
- 1/4 teaspoon salt -
- 1 cup sugar -
- 1 stick butter - softened
- 2 eggs -
- 2 teaspoons vanilla -
- 1/3 cup vanilla yogurt -
- 1/4 cup powdered sugar -
instructions:
- preheat the oven to 350 degrees.
- line a 9x9 baking pan with aluminum foil, allowing the foil to hang over the sides. spray lightly with cooking spray.
- in a small bowl, combine the chopped apples, cinnamon and brown sugar in a bowl. stir until combined. set aside.
- in another bowl, mix the dry ingredients of flour, baking powder, cinnamon and salt. set aside.
- mix in each egg, one at a time. blend in the vanilla, as well.
- add half of the dry ingredients and blend until mixed.
- mix in the vanilla yogurt and then add in the remaining dry ingredients. try not to over mix.
- fold in half of the reserved apples.
- pour the batter into the prepared pan.
- with a slotted spoon, place the remaining apples over top.
- bake in the preheated oven for an hour or until a toothpick inserted comes out clean.
- allow to cool before slicing.
- cut into squares, and dust with powdered sugar.
