moist peach streusel cake

i am an avid peach lover so naturally, i love when summer comes around! you can find me at chick-fil-a drinking one of their peach milkshakes! i LOVE them. before i know it, i am slurping the bottom. i have been wanting to create a peach cobbler recipe on the website for some time, but i could not help but think about a peach cake. there seems to be a lot of streusel cake recipes with fruit but i rarely see any with peaches. that is when the light-bulb went off. i do not have ANY peach recipes on the website yet. shame on, me! that is about to change. this cake was moist, delicious and full of peaches. it was an awesome way to introduce peaches to my website. in hind sight, my only modification would be to slice the peaches a bit thinner before pressing into the cake. however, i did not mind a big piece of peach in my cake by any means. this cake is very easy to make and any peach lovers dream.
ingredients:
- 1 1/2 cup flour -
- 1 1/2 teaspoon baking powder -
- 1/2 teaspoon salt -
- 1 stick butter - softened
- 1 cup sugar -
- 2 eggs -
- 1 teaspoon vanilla extract -
- 1/2 teaspoon almond extract -
- 1/2 cup vanilla yogurt -
- 2 cups frozen peaches - defrosted, sliced in half if too thick
- - streusel topping
- 1 cup flour -
- 3/4 cup brown sugar -
- 1/2 teaspoon cinnamon -
- 1 stick butter - softened
instructions:
- preheat the oven to 350 degrees. lightly spray an 8 inch spring form pan. i used a pan similar to the one here.
set aside.
- in a bowl, combine the flour, baking powder and salt. set aside.
- in a large mixing bowl, cream the butter and sugar with an electric mixer until creamy.
- blend in each egg, one at a time. blend in the extracts, as well.
- incorporate the yogurt and reserved dry ingredients alternatively until blended. try not to over mix.
- spoon the batter into the prepared spring form pan and spread out evenly.
- in a circular direction, place the peaches gently into the batter.
- in a small bowl, combine the streusel ingredients with a fork until combined.
- sprinkle evenly over top of the peaches.
- bake in the preheated oven for 45 - 50 minutes or until golden brown and a toothpick inserted comes out clean.
run a knife carefully along the inside of the spring form pan. unlatch the spring form pan gently.
