moist pumpkin cake

this cake is very light and moist. this recipe is amazing and highly requested by all of our friends and family. sweet potato puree works well with this cake as well.
ingredients:
- 1/4 cup applesauce -
- 1/4 cup oil -
- 1 cup sugar -
- 4 eggs -
- 1 teaspoon vanilla -
- 1 teaspoon cinnamon -
- 1/2 teaspoon nutmeg -
- 1/4 teaspoon salt -
- 1 package yellow cake mix -
- 1 cup pumpkin puree -
- 1/4 cup powdered sugar -
instructions:
- preheat oven to 350 degrees. grease and flour a 10 inch bundt pan.
- with an electric mixer, mix the applesauce, oil and sugar in a large bowl until smooth. add eggs one at a time, blending well. add the vanilla, cinnamon, nutmeg and salt. beat until combined. add the cake mix; mixing just until incorporated. fold in the pumpkin puree.
- pour batter into a 10 inch bundt pan. bake in the preheated oven for 45 - 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. try not to over bake. it will result in a dry cake. allow to cool 10 minutes in the pan, then turn out onto a wire rack and cool completely. once cooled, dusted with powdered sugar.
