orange glazed chicken

my husband LOVES orange chicken! i had to find a way to make it at home. no need to take out a chinese food menu for this one. tonight we are ordering in!
ingredients:
- 2 lbs boneless skinless chicken breasts - cut into 2 inch cubes
- 1 cup flour -
- 1/2 cup cornstarch -
- 1 egg - beaten
- 2 cups oil -
- 1 1/2 cup water -
- 1/3 cup rice vinegar -
- 1/4 cup lemon juice -
- 1/4 cup orange juice -
- 1 tablespoon orange zest -
- 2 tablespoons soy sauce -
- 1 cup brown sugar -
- 1 teaspoon ginger - minced
- 2 garlic cloves - minced
- 1 scallion - chopped fine
- 1/4 teaspoon red pepper flakes -
- 3 tablespoons cornstarch -
- 2 tablespoons water -
instructions:
- in a large shallow bowl, combine the flour and cornstarch. add the lightly beaten egg to another shallow bowl. cut the chicken breasts into bite size cubes, season with salt/pepper to taste and add to the egg. toss to coat, shake off excess and add to flour/cornstarch mixture. dredge the chicken in the flour mixture, shake off excess and place on a baking sheet. let the chicken sit for about 15 minutes to let the flour/cornstarch adhere to the chicken.
- heat the canola oil in a deep skillet to 375 degrees over high heat. once hot, deep fry the chicken in batches until completely cooked through and golden brown.
- in a large saucepan combine, 1 1/2 cups water, lemon juice, orange juice/zest, rice vinegar, soy sauce, ginger, garlic, red pepper flake and brown sugar. bring to boil, being careful not to let boil over.
- combine corn starch and 2 tablespoons water and mix well. slowly stir cornstarch mixture into sauce until it thickens. pour sauce over fried chicken and garnish with green onions.
