sausage and veggie couscous

i have to admit, i am not a fan of couscous. neither is the hubby. so when i casually mentioned that i was going to make a couscous recipe, i can not describe the look he had on his face. he was worried. lol. but all couscous needs is some flavor and a little bit of love. 🙂 when he came into the kitchen once i finished the recipe, he said, wow. that looks good! my entire family tore it up! please don't give up on couscous, ya'll. you gotta give this one a try!
ingredients:
- 2 cups hot water -
- 2 chicken bouillon cubes -
- 2 tablespoons canola oil -
- 2 tablespoons butter -
- 1/2 package kielbasa -
- 1/2 onion - chopped
- 1/2 red bell pepper - chopped
- 1 jalapeno - seeded, chopped
- 4 cloves garlic - minced
- 1/4 teaspoon dried thyme -
- 1/4 teaspoon paprika -
- 2 cups couscous -
- 2 scallions - chopped
instructions:
- in a small container, add the hot water and bouillon cubes. allow to steep until cubes dissolve. feel free to sub in chicken stock.
- preheat a large skillet over high heat. add the canola oil and butter. once hot, add in the sausage. saute over high heat, tossing until browned. add in the onion, bell pepper, jalapeno, garlic, dried thyme and paprika. season with salt/pepper to taste. saute until the veggies are slightly tender. add in the couscous and stir into the sausage mixture. stir in the reserved chicken broth into the mixture and spread everything evenly into the pan. bring to a quick boil. remove from the heat. cover for 5 minutes. fluff the couscous mixture, taste, season with salt/pepper if needed and garnish with chopped scallions.
