slow cooker mexican chicken

slow cooker recipes are my best friend! especially, this is delicious recipe with soft tacos and fav toppings. my hubby could not resist putting it over buttered rice along with all the juices. i must admit he had a great idea. however you use this delicious chicken is up to you, but i know for sure you will enjoy it!
ingredients:
- 1 tablespoon cumin -
- 1 tablespoon chili powder -
- 1 teaspoon paprika -
- 1 onion - chopped
- 1 bell pepper - chopped
- 4 cloves garlic - minced
- 1 can pinto beans - rinsed
- 4 chicken breasts -
- 1 cup salsa -
instructions:
- combine the seasonings with salt/pepper to taste in a small bowl. sprinkle generously over chicken breasts. if you have time, let the chicken marinate in a ziploc bag overnight.
- add the onion, bell pepper and garlic to the bottom of the slow cooker. season the veggies with salt/pepper if desired. sprinkle pinto beans over top. place the seasoned chicken over the veggies/beans and top with salsa. set the slow cooker to low and cook for 7 - 8 hours or on high for 4-6 hours.
for more flavor, feel free to marinate over night before adding to the slow cooker. i tried adding chicken broth with a little flour to the recipe and it turned out great as well. however, i did prefer it without the chicken broth as the chicken provided enough of it's own juices.
