smoked turkey black-eyed peas

we love blackeyed peas, especially my cajun black-eyed pea stew with sausage or my blackeyed pea cakes with paprika lime cream sauce. it is something comforting about them that we love. a great traditional new year's recipe. i love the smokiness the turkey leg gives to the peas. there is enough added flavor but not too much to overpower.
blackeyed peas are one of the cheapest ingredients in a grocery store that can stretch far! i know when you saw ‘blackeyed pea’ you immediately thought, “eeewww!” try them this way and i hope i change your mind!

ingredients:
- 20 ounce bag black-eyed peas -
- 1 smoked turkey wing -
- 4 garlic cloves - minced
- 1 onion - chopped
- 1 tablespoon paprika -
- 2 teaspoons cumin -
- 1 tablespoon parsley -
- 1 bay leaf -
- water -
- hot sauce - (optional)
instructions:
- soak the black-eyed peas in a large bowl of water overnight.
- combine all of the ingredients with enough water or stock to cover the top of the black-eyed peas by several inches in a crock-pot. add salt/pepper to taste, stir and let cook for 6 - 8 hours on low or until peas are tender.
