i love me some eggnog. feel free to add rum, amaretto... any flavored alcohol you like. also, try making eggnog bread pudding with vanilla cream sauce using this recipe.
- 4 cups milk -
- 1 cinnamon stick -
- 4 whole cloves -
- 12 egg yolks -
- 1 1/4 cups sugar -
- 2 cups half and half -
- 1/2 teaspoon pumpkin pie spice -
- 2 teaspoons vanilla -
- combine milk, cinnamon stick and cloves in a double boiler over simmering water. let cook for 5 minutes until scalding.
- in a large bowl, combine egg yolks and sugar and beat well until light and fluffy. add some of the hot milk mixture slowly into the eggs while whisking. continue whisking and pour the entire egg mixture into the double boiler. cook over medium heat, stirring constantly for 3 minutes, or until thick. strain to mixture and let cool for about an hour.
- stir in the cream, 2 teaspoons vanilla, and pumpkin pie spice. refrigerate overnight before serving.
