sweet corn and bacon salad

we love to eat fresh corn in the summer time. when i was young, my mom used to make fried corn all the time. we use to look for farmers selling corn along the side of the road and LOAD UP! we would have corn for days! with summer coming to an end, that means one thing: i gotta get my corn on! we eat my mom's fried corn recipe a lot, but i wanted to change it up a bit. the bacon and paprika added the perfect smokiness to the sweet corn. let's just say the way we are eating on this recipe, i don't think it will make it to dinner! 🙂
ingredients:
- 4 slices of bacon - chopped
- 5 ears of corn -
- 1/2 onion - chopped
- 1 garlic clove - minced
- 1 jalapeno - seeded, chopped
- 1/2 red bell pepper - chopped
- 1/2 teaspoon paprika -
instructions:
heat a large skillet over medium high heat. once hot, add the bacon. saute, until crunchy, about 10 minutes. remove the bacon from the skillet with a slotted spoon, leaving the drippings in the pan. pour off some of the bacon grease leaving about 2 tablespoons or leave it in. 🙂
meanwhile, in a bowl, shave the corn from the cobs with a sharp chef's knife. with the back of the knife, firmly scrape the cobs over the bowl to extract as much milk from the corn as possible. set aside.
once the bacon has been removed from the pan, add in the veggies and paprika. saute for a couple of minutes. add in the corn. stir and saute the mixture for about 5 minutes until the corn is tender. stir in the reserved bacon. serve hot.
