tortilla pizzas

this is my kids favorite. they love pizza and i usually always have tortillas in the pantry. what i like most about this dish, it is easily customizable. if one kid wants cheese, another wants pepperoni and the other wants supreme, it's okay. each child gets their own customized quick flat bread pizza! the funny thing is, i can't put these pizzas on my kids. the hubby and i make them often because we love the crunchy thin crust. the added bonus is it satisfies our pizza cravings at such a low cost. no need to order pizza, folks. we are ordering in. 🙂
ingredients:
- 2 (10 inch) tortillas -
- 2 tablespoons canola oil -
- 1 1/2 cups mozzarella -
- 2 tablespoons tomato sauce -
- 10 pepperoni -
instructions:
- preheat the broiler. line a cookie sheet with aluminum foil. set aside.
- add oil to a large skillet over medium high heat. add one tortilla, allowing to brown slightly on that side. flip the tortilla and reduce the heat to simmer, so the tortilla will not burn. spoon about a tablespoon of tomato sauce over the tortilla, leaving the edges free for the crust. sprinkle the cheese evenly over the sauce. top with pepperoni - 5 on each. cover with a lid to allow the cheese to melt slightly. transfer to the prepared cookie sheet and place under the broiler until the cheese bubbles and begins to brown, about 1 to 2 minutes, (watch the tortillas closely while under broiler and be careful not to burn). transfer tortillas to individual plates and cut into wedges.
