strawberry orange scones with vanilla glaze

these scones are incredibly good. this is a very versatile recipe. try a variety of fruits such as apricots or blueberries. also, experiment with spices such as cinnamon or nutmeg. i literally used what fruits i had in the house that day and it turned out good! also, scones freeze well! make an extra batch, toss them in a freezer bag (unglazed) and freeze them. they are great to have in the freezer to bake fresh on a lazy morning. i successfully found another way to use the strawberries in our garden!
ingredients:
- 2 1/4 flour -
- 1/4 cup sugar -
- 1 tablespoon baking powder -
- 1/2 teaspoon salt -
- 6 tablespoons unsalted cold butter - cubed
- 1 tablespoon orange zest -
- 1 cup chopped strawberries -
- 1 egg, lightly beaten -
- juice of 1 orange, about 1/4 cup -
- 1/2 cup vanilla yogurt -
- 1 teaspoon vanilla -
- 1/2 cup confectioners sugar -
- 1 teaspoon vanilla -
- 1 1/2 teaspoon milk -
instructions:
- preheat the oven to 400 degrees.
- combine the dry ingredients in a large bowl. cut the butter into the dry ingredients until the butter is pea sized pieces. fold the orange zest and strawberries into the mixture.
- combine the wet ingredients well in a bowl. make a well into the dry ingredients and pour in the wet ingredients. gently mix the wet into the dry until the dough is moist. try not to over mix the dough. turn the dough out onto a floured surface. the dough may be sticky, so flour your hands/rolling pin well while handling the dough. roll with a rolling pin or pat the dough into a 3/4 inch disk. flour your knife and cut the dough into 8 wedges. place them in a baking sheet lined with aluminum foil. baking in the preheated oven for about 20 minutes until they are lightly browned and the insides are cooked through.
- for the glaze - combine all the ingredients and whisk until smooth. brush onto the scones while they are slightly hot. the glaze will harden onto the scones as it cools.
