summertime is awesome! although the heat may spoil the fun, the kids are walking around in their flip flops and shorts having a great time. our garden is thriving and full of fresh vegetables. it is nothing like eating vegetables and herbs fresh from our own garden and the money it saves us is an added bonus. this month, we have some recipes with some fresh ingredients from our garden that are simple and delicious.

dirty rice – not your traditional dirty rice! this rice is made with ground chicken. since we all know ground chicken is very lean, i added some bacon to the mix for a little added fat and it worked perfectly! with flavored rice, celery, onion, fresh garlic, bay leaf and other aromatics, you have a delicious but lighter than usual dirty rice.
potato sausage hash – i absolutely love potatoes. especially in a hash. i decided to make this hash for dinner one day using the leftover veggies i had in the fridge and it was a huge hit with the family. beautifully browned and crispy potatoes paired with seared sausage, onions, garlic, red bell pepper and herbs makes a great combination!
slow cooker mexican chicken – who does not love a slow cooker meal? the chicken gets a rub down with some spices and is tossed on top of a bed of fresh veggies and pinto beans, topped with some salsa and simmered on low for 8 hours. the tender, melt in your mouth chicken makes its own flavorful juice that goes well over buttered rice. we had enough leftovers the next day for some mexican chicken soft tacos. however you decide to eat it, you will enjoy it! make double the amount and freeze!
grilled vegetable hash – for the vegetable lover! fresh corn, zucchini and onions grilled until slightly crunchy, then tossed with fresh tomato, garlic and balsamic vinegar. this was delicious on our ‘meat free’ night. we had this hash with parmesan garlic bread.
chicken meatballs with dijon dill gravy – very light, tender, flavorful chicken meatballs get the joy of sitting in a rich dijon dill gravy. pour the gravy over easy white rice , and you have an incredible dinner.
